My name is Elaine Scanlon and I am the owner and chef of the Abundant Kitchen, LLC.

 

I love my work because it gives me great pleasure to prepare healthful, delicious food for others. I enjoy seeing the positive changes my service creates in my clients’ lives.

 

Who are my clients? They are time-starved individuals, couples and families. They are people with dietary restrictions who can’t or prefer not to cook according to those restrictions. They are people who dislike cooking or who just don’t want to cook, but who want to eat great food prepared healthfully in their own homes.

 

It's a shame that food has become the enemy for many Americans and dinner is just something we have to somehow get through each night. In reality, the culprit is the kind of food we eat and the way we eat: convenience foods, oversized portions and eating on the run. Yet, food can be fun, exciting, beautiful, mouth-watering and still be good for you.

 

When I cook, I do not use shortcuts. I create meals with fresh, seasonal ingredients according to each client’s personal taste preferences and dietary needs. In short, I cook for each client as though I were cooking for my own family in my own home.


I know that putting healthy dinners on the table is not easy. My husband and I both work and volunteer and we have two very busy kiddos. I certainly am not above picking up dinner at the local pizza place now and then. There are evenings when we don’t get to see each other very much, let alone sit down together for dinner.

 

But more and more, I am finding that enjoying a home-cooked meal with my family is the key to a happier, healthier lifestyle. I want an abundant kitchen for my family and I wish it for yours, too.


 

Chef's Testers

I have four favorite recipe testers: my husband, our two children and our little dog, Juliette. Juliette is my most appreciative customer: She gives everything I make an A+. But, then, she thinks tree bark is tasty, so you have to consider the source.

My husband, fortunately, is a bit more discriminating. And my kiddos have highly discriminating palates: They have tasted most of my recipes and have even given some of them and A. Of course, they prefer that I don't actually mix ingredients together ("Ack! You've put peas in the casserole! Are you trying to kill us?") so—again—you have to consider the source.

 

With this great range of testers, you can bet I’ve got to stay on my toes. Don't worry, your picky eaters, whoever they might be, don't scare me. After all, I guess, they can't all be Juliette :-)
